You know how I know you love avocados? Because you’re a human being and it’s impossible not to love avocados.
Even better, these avocados are mixed with lean ground chicken, fragrant garlic, and smoky chipotle chilis in adobo sauce. Can I get a YASSSS?
But seriously, these burgers are so simple to make and they cook up beautifully on a cast iron grill pan or on a regular grill. We don’t use an outdoor grill because we live in an apartment complex with a janky grill that only lights on one side. They have literally pushed fixing that grill to the back burner, PUN INTENDED. But a grill pan works perfectly.
This is one of my go-to recipes after a busy day because you just mix everything in one bowl and cook it for about 10 minutes. Then you’re done, BOOM.
Chipotle Chicken Avocado Burgers
Prep time: 15 minutes | Cook time: 10-15 minutes | Serves 4
- 1 lb. lean ground chicken
- 1 avocado, diced small
- 1 tsp. minced garlic
- ½ cup fresh cilantro, chopped
- 1 tsp. adobo sauce (from a can of chipotle peppers in adobo sauce)
- 2-3 chipotle peppers, finely chopped + 1 Tbsp. adobo sauce
- Pepper jack cheese
- Thinly sliced red onion
- ¼ cup bread crumbs
- Salt and pepper to taste
- 1 cup Greek yogurt (I use non-fat)
- 4 good burger buns (you can also wrap these in lettuce if you prefer)
In a large bowl, mix the ground chicken, avocado, garlic, 1 tsp. of adobo sauce, breadcrumbs, salt and pepper. Form into 4 patties. Use a grill or a trusty cast iron grill pan (my favorite kitchen item), to grill these burgers until fully cooked, about 4-5 minutes per side.
Meanwhile, mix the finely chopped chipotle peppers, remaining adobo sauce, chopped cilantro, Greek yogurt and a bit more salt and pepper to taste.
Toast your buns in the oven, then top with the chicken patty, a slice of pepper jack cheese, sliced red onion and the chipotle yogurt sauce.
I love to serve these with some oven fries and a pickle!
